Ode to the Crockpot

It's no secret that our crockpots are well loved. Yogurt, to mulling cider, to at least one dinner a week my two crockpots get plenty of use. However, I only recently found the joy of combining freezer meals and crockpots. I know, plenty of you have been doing this for years, but I'm a little behind the times.

Basically, I wanted a way to prepare a meal ahead of time, freeze it, then use a crockpot to cook it. You know because traditional crockpot cooking isn't lazy enough for me! I've tried all of the following recipes and will definitely be adding them into my cooking repetoire. Another plus is that I can make several meals in one day, freeze them and then always have something on hand for taking to others. Furthermore, if the good Lord grants us with a second child, I'll be stocking my freezer full of these tasty meals.

P.S. For you expectant mamas who like burritos, I would also recommend buying a can of refried beans, a can of green chilies, and small soft taco tortillas. In a pan, warm the beans and the chilies. Then fill your tortilla, roll, and wrap in plastic wrap and start filling a freezer bag. Freeze. When baby comes, you're exhausted, but starving these two minute microwave burritos will hit the spot. I made them shortly before T was born and they (along with pop-tarts) were life savers!
